Position Summary:

The Banquet Cook prepares high quality food under supervision of Banquet Chef, Exec. Sous Chef and Exec. Chef to established quality/quantity guidelines

Accountabilities:

The Banquet Cook is responsible for the timely, accurate preparation and plating of banquet food items based on company specifications and function contracts.

Qualification Standards

Education & Experience:

  • At least 2 years of progressive experience food & beverage in a hotel or related field
  • Valid ServSafe Certificate
  • High School diploma or equivalent preferred
  • College course work in related field preferred

Tools & Equipment:

  • Calculator, computer, copier, scanner, other office equipment
  • Various cutlery, can opener, blenders, band saw, gas range, deep fryer, griddles, char-broiler, conventional oven, choppers, meat grinder, meat slicer, convection ovens, deck ovens, range tops, broiler, steam table, various refrigeration/freezers, toaster, scales, steam kettles

Physical Requirements:

  • Long hours sometimes required
  • Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects
  • In and out of refrigerators/freezers with some frequency
  • Near Vision - The ability to see details at close range
  • Ability to stand for long periods of time without sitting or leaning

  • Oral and Written Comprehension and Expression - Must be able to convey information and ideas clearly in English
  • Must be able to evaluate and select among alternative courses of action quickly and accurately
  • Must be effective in handling problems in the workplace, including anticipating, preventing, identifying, and solving problems as necessary

  • Must maintain composure and objectivity under pressure

  • Mathematical Reasoning - Must be able to work with and understand basic arithmetic functions

  • Thorough knowledge of F&B procedures and serving standards
  • Health Department rules and regulations
  • Ice Carving

Duties & Functions

Essential:

  • Approach all encounters with guests and employees in a friendly, service oriented manner
  • Maintain regular attendance in compliance with Interstate standards, as required by scheduling which will vary according to the needs of the hotel
  • Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and name tag when working
  • Comply at all times with Interstate standards and regulations to encourage safe and efficient hotel operations
  • Roast meats/poultry to proper temperature
  • Portion and bakes fish per function contract
  • Prepare food in bulk for banquet operation
  • Prepare and store properly & expediently various fruits and vegetables
  • Understand proper food storage & handling procedures
  • Maintains clean and sanitary working environment
  • Differentiate spices and use same effectively
  • Prepare, store, heat and serve hot hors d'oeuvres
  • Cook potatoes in various fashions per function contracts/recipe cards
  • Use Fryolator safely and effectively
  • Understand battering and/or breading techniques
  • Demonstrate proficiency in the following cooking techniques: braising, pan-frying,, sauté, poaching, boiling, par-cooking, broiling, deep frying, roasting
  • Cook rice and pastas
  • Dish up food in sufficient quantity to service specific functions
  • Serve food to waiters, sauce platters as they go into dining room
  • Recover left-over food from function; and return same to main kitchen
  • Insure compliance with all local liquor laws, and health & sanitation regulations
  • Insure departmental compliance with S.O.P.s
  • Be up to date on all guest services, promotions and events in the Hotel
  • Keep immediate supervisors fully informed of all challenges or matters requiring his/her attention

Marginal

  • Other duties as required
  • Follow direction of Sous Chef and Banquet Chef in daily tasks
  • Recognize available food garnished and utilize same
  • Participate in all hotel and departmental meetings as requested
